Recipes in this section include both raw food and whole "cooked" food recipes.  Many of these recipes will be plant-based along with a portion having animal-based products, often including a vegan or vegetarian option.  From my background and experience to the classes I've taught and in-home training, I cover many special types of food preferences from vegan to paleo to low glycemic (low sugar), meeting a wide range of deliciously healthy food connoisseurs.

Easy Chocolate Bark with Optional Matcha Green Tea

3/4 cup cacao powder

2/3 cup cacao butter (liquify cacao butter in video tutorial)

2 tablespoons raw honey or liquid sweetener

1 tablespoon matcha green tea powder

1/8 teaspoon sea salt

Optional Toppings

1/4 Cup raisins (for full recipe)

2 Tablespoons hemp seeds (for full recipe)

To liquify the cacao butter, I find it best to shave it down into little pieces as I did in the video tutorial. Place into a dry bowl or measuring container and immerse in a larger bowl of hot water until melted. Make sure water does not get into your cacao butter.

With a whisk, fork, or blender, combine all the ingredients together until smooth. Pour mixture into a 9 by 9-inch pan lined with parchment or wax paper. This is optional, but if you place your pan or tray in the freezer for 10 minutes, the bark with harden faster while you are pouring.

Top with nuts, seeds, or dried fruit.  Enjoy your bark plain or topped with your favorites, such as raisins and hemp seeds as I did in the video tutorial.

Chill in the refrigerator for 15 minutes to firm. Store in an airtight container in the refrigerator for up to one month. Makes one 9X9 inch sheet of dark chocolate bark.

Can you use coconut oil instead?

Yes, and in the same amount as the cacao butter. However, your bark will not stay solid at room temperature if using coconut oil so you’ll need to keep it in the refrigerator right before eating.
